ah yes I forgot about taxonomy I shall look into that, ive not used them before so will be good to look into it more.

Oh, I just re-read your post and realised you may not have been referring to post thumbnails by "images". I haven't figured out how to add more than one custom post thumbnail. Adding multiple images to a custom post-type post is the same as adding them for a regular post (ditto for the thumbnails too).
it would be nice to be able to allow for say 5 images for a post that a user can add via the featured image box as it makes it so much easier and then we can grab the images and use for a gallery for example.

Think it will need some extra coding as if the user adds images in and then removes one in the middle i don't want it to disrupt the output so maybe a loop would be better but it is a great plugin

Nice, wold be good if we could edit the code to allow us to set the amount of images eg 5 and then it just loops and adds in the labels and id etc automatically and then the output we just pass in the amount of max images to show. If i cna ill have a look at it over the weekend or early next week.
I added this as a metabox one time. It basically duplicates the image uploaded, but you can put it anywhere in the post page, which might make it more useful:
